Fathead Pizza Dough

What kind of diet lets you eat pizza any time you want? Keto of course. You just have to figure out how to get rid of the thirty or more carbs in your average crust. A lot of keto people just eat the toppings and toss the crust. That’s great, in a pinch, but it’s not the same. Luckily someone came up with a really good pizza crust without the carbs–The Fathead. At first I was skeptical. The recipe looks…weird. But when I made one I was blown away. It looked, tasted and felt like a real pizza crust. Not only that it was actually faster and easier to make than the real thing.

If the idea of melting cheese in the microwave scares you. Fear not. It doesn’t have to be boiling. It only has to be melted enough to mix smoothly with the cream cheese and accept the other ingredients. You don’t have to use a cast iron skillet, but it will give you a nice crispy bottom. Especially if you pre-heat it in the oven while you mix the dough.
